I cooked this for my friends while we were in France last week and everyone was asking for the recipe. The truth is that it's really simple and always turns out well, so even those who don't have much confidence in their cooking should definitely give this a go!
I don't have measurements for the ingredients, not because I'm trying to seem nonchalant but because I kind of make it up as I go along as exact quantities really don't matter for this recipe and it mainly depends on personal taste, I do it slightly differently each time I cook it depending on my mood.
Salmon fillet(s) (depends on how many your cooking for)
Sesame oil
Ginger
Spring onions
Limes
Balsamic vinegar
Balsamic glaze
Put the salmon in a baking dish so that it fits quite snugly, and drizzle it with a couple tablespoonfuls of sesame oil. Grate a good sized chunk of root ginger over the top and some finely chopped spring onions. Squeeze over the juice of a lime or two, and add just a splash of balsamic vinegar. Leave the salmon to marinate in all this, skin side up, for about 20mins.
After marinating, turn the salmon over and baste it in the juices so that most if the ginger and spring onion is coating the salmon. (I like to drizzle on a little bit of balsamic glaze at this point just to add a bit of sweetness and crispyness once its cooked but it's up to you). Put this in the oven to bake at about 200degrees for about 20 minutes, or until soft and just slightly pink in the middle.
Serve immediately. (It goes well with so many things: potatoes/rice/veg/couscous etc.)
