Juicy Prawn, Pepper & Chorizo Linguine

Don't you just love it when everything that's left over in the fridge magically comes together into something really yummy!
Threw this together the other day and I have to say it was pretty bloody tasty!



Fried some chorizo until all the yummy oil starts to come out and the pieces are slightly crispy on the edges. Threw in some red onion, garlic, chunky pieces of red pepper and cherry tomatoes and let them soften for a bit. Once the tomatoes had released some of their liquid I added a healthy slug of red wine, a squirt of BBQ sauce, a splash of balsamic vinegar and a tiny bit of creme fraiche and let it reduce and intensify for a few minutes. Finally, I chucked in a pack of pre-cooked prawns and let them heat through. Season with salt and pepper and pinch of chilli powder.

With some fresh linguine, this makes a really tasty dish that balances the rich, deep tomato flavour, sweet juicy peppers, with salty chorizo... The prawns were a lucky addition to the mix but it would still be great without them.
